
Starting 5 March, Swiss International Air Lines (SWISS) will treat its First and Business Class passengers to exquisite culinary creations co-developed with the renowned Zwyssighaus restaurant in the charming village of Bauen, Canton Uri. For the next three months, premium travelers flying long-haul from Switzerland will savor exclusive dishes crafted by Joshua Lüscher, the 34-year-old chef de cuisine at the historic restaurant, which is also the birthplace of Alberich Zwyssig, composer of Switzerland’s national anthem. Lüscher, who earned 15 GaultMillau points, is celebrated as one of Switzerland’s rising culinary stars.

Goat Meatballs, Vitello Salmone, and Rhubarb Tiramisu
SWISS’s First Class passengers can indulge in a selection of starters, including a refined tatar of cured pikeperch with mustard pickles, complemented by marinated white asparagus. Main course choices feature a succulent veal steak with herb butter jus, paired with green pea and potato purée, or goat meatballs with velouté, served with crayfish and clam sauce. To finish, a delectable dulce de leche tartlet with poached pear offers a sweet ending.
Business Class guests will enjoy a reimagined classic with vitello salmone, capers, and toasted brioche to start. Main options include braised beef shoulder with jus and morels, accompanied by ribelmais polenta, or chicken breast in a Casimir curry sauce. A lemon cake with mascarpone and verbena gel adds a refreshing touch to conclude their meal.
In Premium Economy Class, passengers will be treated to a three-course meal inspired by Uri cuisine for the next three months. They can savor a hearty beef stew with red wine sauce, followed by a fruity rhubarb tiramisu for dessert.
These exquisite dishes are part of SWISS’s ongoing ‘SWISS Taste of Switzerland’ inflight culinary program, which has been delighting customers for 22 years. Every quarter, in collaboration with catering partner gategourmet, SWISS introduces a top chef to create a selection of regional specialties from their home canton. Along with the meals, wines and cheeses from the featured region complement the experience.
