The Luxury Collection is elevating its commitment to sustainability through an innovative partnership with MAD Academy, a nonprofit founded by renowned three-Michelin-starred chef René Redzepi. This collaboration is designed to transform culinary practices within its global portfolio by prioritizing eco-conscious operations and fostering a new generation of sustainability-driven chefs.

Empowering Culinary Leaders Through Hands-On Training

To spearhead this initiative, The Luxury Collection has introduced an intensive training program in partnership with MAD Academy. This program provides immersive workshops for chefs and hospitality professionals who are passionate about environmentally responsible gastronomy. Participants engage in practical, hands-on learning focused on minimizing food waste, sourcing local and seasonal ingredients, and implementing sustainable kitchen practices. The goal is not just to refine culinary techniques but to instill leadership skills that drive meaningful change within luxury hospitality.

The first of these training sessions took place in November 2024 in Copenhagen, featuring industry pioneers such as Matthew Orlando, former head chef of Per Se; Portia Hart, founder of Blue Apple Beach; and Christian Puglisi, owner of Bæst and Mirabelle Spiseria. Over the course of three days, 13 chefs from The Luxury Collection’s properties worldwide explored innovative sustainability solutions and discussed actionable strategies for their own hotels and resorts. This marks the beginning of a long-term effort, with additional programs scheduled throughout 2025 to further expand the brand’s environmental initiatives.

Transforming Guest Experiences with Sustainable Culinary Journeys

Beyond internal training, The Luxury Collection is integrating sustainability into the guest experience by partnering with MAD Academy’s network of experts. Several properties have launched new culinary programs that foster deeper connections to local food traditions and the environment:

  • The Gritti Palace, Venice: Guests can now take part in immersive cooking classes at the Gritti Epicurean School, beginning with a visit to the historic Rialto Fish Market to hand-select fresh, locally sourced ingredients. The property has also expanded its sustainable gardens, including a dedicated plot on Giudecca Island and a sprawling garden on Mazzorbetto Island with over 6,000 artichoke plants. These locally grown ingredients are woven into seasonal menus at Club del Doge and even appear in artisanal welcome amenities.
  • The Romanos, Costa Navarino: Strengthening ties with local producers, the resort has introduced a rotating “Risotto of the Month,” highlighting ingredients from nearby farms. Each dish is accompanied by a custom watercolor postcard featuring the recipe, allowing guests to recreate their culinary experience at home. The resort also hosts a monthly “Four-Hands Dinner,” where visiting chefs collaborate with the in-house culinary team to showcase regional flavors. Cooking workshops, farm excursions, and hands-on tastings further immerse guests in the rich agricultural heritage of Greece.

A Global Shift Toward Sustainability

Following the success of the inaugural MAD Academy training, The Luxury Collection properties worldwide are ramping up their sustainability efforts by forging partnerships with local farmers, artisans, and producers.

  • The Alexander, Yerevan: This Armenian property sources fresh dairy from Vayots Dzor, featuring locally made matsun, cream, and honey in its breakfast buffet and signature desserts.
  • Hotel Grande Bretagne, Athens: The hotel supports a family-run farm in Southern Evia, incorporating organic figs into breakfast spreads, specialty drinks, and room amenities. This initiative not only celebrates Greek agricultural traditions but also provides economic support to a region affected by climate change.
  • The Hythe, Vail: In Colorado, The Hythe has teamed up with Fitch Ranch Artisan Meat Co. to offer premium, locally sourced meats in its dining venues, reinforcing a commitment to ethical and sustainable food sourcing.

As The Luxury Collection deepens its collaboration with MAD Academy, these initiatives set a new benchmark for luxury hospitality, proving that exceptional guest experiences and environmental stewardship can go hand in hand. Looking ahead, the brand aims to expand its sustainability programs, ensuring that each of its properties becomes a model for responsible, conscious dining.
