A breathtaking transformation is unfolding at Wine & Roses, paving the way for a new chapter in this cherished wine country retreat, set to debut as Appellation Lodi – Wine & Roses Resort and Spa in late spring 2025. Operating owners Russ and Kathryn Munson, alongside their longtime investment partners, have teamed up with Appellation, the culinary-driven hospitality brand co-founded by renowned American chef Charlie Palmer and luxury hospitality expert Christopher Hunsberger. This collaboration will usher the resort into its next era. Throughout the phased renovation, which is expected to conclude in late spring 2025, the resort will remain open for guests to enjoy stays, dining, and spa experiences. Appellation Lodi – Wine & Roses Resort and Spa will be the first operational hotel under the Appellation brand, which is also developing several new-build properties, focusing on California’s emerging wine regions.

A RENOVATION THAT HONORS THE HOTEL’S LEGACY AND LODI’S FUTURE

The renovations enhance the hotel’s storied legacy while embracing Appellation’s philosophy, where culinary excellence shapes every part of the guest experience. This vision extends beyond dining to design, botanical and culinary gardens, public spaces, and curated programming. Together, the Appellation and Wine & Roses teams will celebrate the hotel’s history and redefine the future of hospitality in Lodi.

“Our beloved, historic estate has seen many lives, starting as a working ranch more than a century ago and transitioning to a 10-room bed and breakfast, which evolved into today’s 66-key boutique hotel,” remarks Russ Munson, operating owner of Wine & Roses. “Our newfound partnership with Appellation marks an exciting evolution for the hotel and Lodi hospitality, as we continue to elevate the guest experience together.”

When the newly refreshed accommodations at Appellation Lodi – Wine & Roses Resort and Spa are unveiled in the coming months, guests will experience a design that celebrates the region’s agricultural legacy, honoring its growers and winemaking traditions. The spacious interiors will feature light oak furnishings and handcrafted textures, creating a warm, artisanal atmosphere. A rich color palette inspired by Lodi’s landscape—harvest greens, eucalyptus, cognac, and honeyed oranges and yellows—will seamlessly blend the outdoors with the indoors. Many rooms will showcase custom textures drawn from the rolling vineyards and golden grain fields, providing an authentic and welcoming ambiance.

A REVITALIZED CULINARY EXPERIENCE ROOTED IN LODI’S ABUNDANT WINE COUNTRY

Appellation Lodi – Wine & Roses Resort and Spa will introduce a new culinary program curated by Michelin-starred Chef Charlie Palmer, Chef Thomas Bellec, Appellation’s Chief Culinary Director, and Executive Chef Marco Fossati. The program will feature two signature dining concepts by Chef Palmer and a complete transformation of the culinary landscaping and programming, all designed to highlight the rich flavors of Lodi Wine Country.

“With more than 85 boutique wineries, Lodi is home to a vibrant wine and dining scene. Appellation Lodi – Wine & Roses Resort and Spa will serve as an anchor for discovering the destination and its vibrant offerings,” notes Appellation co-founder and Chief Executive Officer Charlie Palmer. “Our hope is to shine a much-deserved light on Lodi with the reinvigoration of this landmark hotel, while continuing to preserve its beloved spaces like the tasting room operated by the Lodi Winegrape Commission, representing more than 750 growers.”  

As the first step in its transformation, Maison Lodi opened in February 2025, bringing a fresh concept to the former Towne Corner Café & Market. This new space introduces the art of French baking to Lodi Wine Country, offering hearty breads, delicate pastries, and rotisserie-roasted chickens, all crafted in collaboration with Healdsburg’s renowned Quail & Condor Bakery. The menu also includes seasonal salads, artisan sandwiches, and house-made marketplace selections, all served in a bright, contemporary farmhouse-style café. The open kitchen lets chefs create fresh, locally sourced dishes each day.

The Towne House Restaurant will be reimagined as Americana House, preserving part of its original name to honor its legacy as the hotel’s first building. True to its roots as a Charlie Palmer restaurant, the redesigned concept will feature his signature Progressive American Cooking, emphasizing seasonal produce and the region’s rich agricultural bounty in a refined yet approachable setting. Americana House will feature a dedicated cheese aging cabinet to mature house-made cheese curds and ricotta, alongside selections from Lodi and Northern California. A wine decanter station will provide an engaging experience, encouraging guests to explore seasonal wine offerings.

Guests will also have the chance to interact with chefs at a culinary counter, enjoying small bites, wine tastings, and special menus. The restaurant’s design will feature warm wood tones, harvest-inspired colors, and accents of brass, copper, and bronze, complemented by updated outdoor seating with lush greenery.

Additional enhancements at Appellation Lodi – Wine & Roses Resort and Spa will include:

  • Expanding the landscape with culinary gardens growing seasonal produce, allowing chefs to create dishes using freshly harvested, hyper-local ingredients. Newly manicured meandering pathways will lead guests to outdoor patio spaces with fireplaces for relaxation and gathering.
  • Crafted at Appellation programming, offering both the local community and hotel guests ongoing hands-on classes and workshops with local artisans and makers.
  • An annual signature food and wine event highlighting Lodi winemakers, growers, and restaurants, with a charitable focus supporting community organizations and local student scholarships.
  • The hotel’s beloved spa will be rebranded as Wine & Roses Spa, celebrating the hotel’s dedication to wellness offerings.
